Before we went Vegan, I had a meat-loving 5-year-old. Using the Ruby Roth books she easily was convinced she didn’t want to eat animals.
Having said that, getting her diet to be plant-based has been an effort. One thing everyone in our home loves but her is tofu. So, if you follow me on Instagram you will see I am on #missiontofu. This is attempt 1 millionth 2 hundred and…. I don’t know I’ve cooked a lot of different tofu recipes.
Last night I found a winner. This is something you would need to customize a bit to your tastes. For example, she loves poultry seasoning so I used 1/2 tsp. This could be changed to whatever seasoning your kiddo loves.
1 block extra firm tofu
1 cup flour
1/2 tsp poultry seasoning
1/4 tsp garlic powder
3/4 cup non flavored vegan milk
1 cup panko breadcrumbs (check label)
- Cut tofu into small squares place on a paper towel on the cookie sheet put tofu on top and another sheet of paper towel on top. Either fit another cookie sheet on top or something else. I use a cutting board with my cast iron pan. I try to press for an hour.
- Mix everything but vegan milk and breadcrumbs in a bowl. Another bowl just milk, 3rd bowl bread crumbs.
- Dredge tofu, my favorite dredge tip is to have a wet hand and a dry hand. So wet hand picks up tofu, dry hand covers in flour mixture. The dry hand moves to milk. Wet hand flips and moves to breadcrumbs. Dry hand coats tofu.
- You could bake these, I fried them in oil until brown. Took about 5 minutes. Put on a paper towel to remove excess oil.
